Shortened keel 7" because of shallow water in our harbour. Mars Metal - they produce the keels for J-boats, Beneteau, and others. they also pour custom keels and things like bulbs for shortened keels did the calculations and poured the lead halves. We did the work ourselves.
In my case, they said my 7" lead keel stub weighed 240 lb, and that I should put on 280 lb of torpedo bulb, the extra 40 lb to compensate for the loss of weight and depth. I asked for an extra 100lb down there, willing to accept the weight penalty for a little additional stiffness. So they sent me 2 halves of a bulb at 200 lbs ea.
So far it seems fine, have raced PHRF and won in very light conditions, and 40 kt+; point with Etchells... The only way to really know what we've given up would be to bring the boat down there and race one design... not in current plans...
The St Lawrence Valley Yacht Racing Assoc has assigned me a handicap of 114, which I believe is the same as unmodified sister ships on the Great Lakes (we sit deeper in fresh water than you salties). They tell me that unmodified I would have been 111, and that they've given me 3 secs/mile to compensate for the keel mod.
