4'8" fwd end of keel. 4'9" at aft end (curvature of hull)
7" was the min I could take to get in and out of our harbour. Also because there is a full keel Alberg 37 at our place that draws 5'9", so at low water, I let him plow his way out through the silt, and open the way for me.
Took as little as possible in order to protect performance. However, Mars Keels said that to compensate for the 240 lb we took off, I should have 280 lb to compensate. I asked,for an extra 100 lb down there, feeling I would accept the weight penalty in very light air, as a tradeoff for a little more stiffness. 100 lb 5'9" below the waterline is worth 200 lb on the rail.
Overall increase in wetted surface is about 14 sq in. We can't determine in any scientific way if the shape of the bulb at the end of the keel has any tip vortex attenuation effect, but as I said, I can point with the Etchells, and am as fast or faster on all points of sail except downwind when they hit planing velocity.
Still working on getting our 8-man boat handling as slick as they are in their 3-man boats with smaller, more easily handled sails...
